I have also noticed this phenomena but only since I came back to Utah. THREE of my relatives have these stars on their walls. One TBM, one jackmo, and one exmo. I think the "real" story about these is that....

Yeah, the stars should represent the lowest kingdom because they are so much lesser than the sun and moon. This is primitive, just like everything in scriptures (and the 19th century ravings of a self-appointed "prophet.")

It's not surprising something like barn stars caught on in Moville. They represent an artificially idealized past, which is what Mormonism aspires to.
