If you haven't already made them, these are the best scones I've ever made. I've made them as chocolate chip, cherry and white chocolate, etc. You can add in whatever you want.

this is an agreeable recipe. I make my scones with chopped, cooked thick cut bacon and chopped dates

My tip: Freeze the butter, then grate it before you cut it into the flour. You'll have the nicest scones on the planet.

Classic English scones.

These are different from Utah Scones or American coffee house scones.

You might like to try this: http://www.krusteaz.com/products/other-mixes/scone-mix-mix

I grew up in northern New Mexico, but have been in western Washington for a couple of decades.

Scones at fairs around here seem to drive people crazy, to me it's yo hum.

My childhood memories of favorite baked goods were biscochitos (anise flavored cookie with cinnamon/sugar) and galletas (dinner biscuits).

Every cook had their own version and style of these favorites. Nothing was ever measured, it was always handfuls of flour, some lard or shortening (whatever you had), salt, water or milk, add sugar and anise for the cookies.

You kneaded the dough until right(??) then let the bread rise, and put into a medium to hot oven until ready. Mom's were always great, grandma's were too sweet and my great aunts were too heavy, she never used shortening, it was always 100% lard.

If you said anything tasted funny or different, you were told to put them down, someone else would eat them and you could go hungry.

Anything loaded with lard.

And I wonder why my cholesterol is sky high and I'm borderline diabetic.

p/s I didn't include sopaipillas, they're not baked.

Here's a great link to New Mexico recipes.

Google Queen Elizabeth Drop Scones...a recipe she presented to President Eisenhower in 1960 at his request.
