God started caring about tobacco, alcohol, and grains thousands of years after humans started consuming these things enough to give humanity words of wisdom through Joseph Smith?

Probably not because he obviously doesn't care if his prophets ignore The Word of Wisdom in what they consume.

Wouldn't it be wild if LDS Inc. brought mild drinks back? It will never happen but it is interesting that The Word of Wisdom doesn't prohibit beer and wine.

Actually, wine is what LDS Inc. was built upon. The visions of Kirtland Temple Dedication would never have happened had the sacramental wine been administered throughout the day.
