Yes, they do, when his ignorance is needed to bolster the official story line. However, thinking back on that First Vision video, or whatever it's called, it seems that JS becomes very intelligent in his role as prophet. He stands in front of the humble, unwashed, European convert farmer types, in his clean blue suit, wavy hair, and delivers stunning orations. Question is- where did he get all this education, this public-speaking skill? He suddenly learns a lot of big words, for a simple New York farm boy.
