I’ve been reading three books over the years, all by Jean Carper
-- discusses each of the major vitamins and minerals and provides a chart, listing the vitamins and minerals contained in the most popular foods
- Total Nutrition Guide
Food -- Your Miracle Medicine -- subjects arranged according to type of diseaseThe Food Pharmacy -- subjects arranged according to type of food
I like Jean because she’s rather conservative in outlook and has a skeptical streak to her. For example, on vitamin E she says,It is doubtful that many people, with the possible exception of those on very low-calorie, low-fat diets, are deficient in vitamin E by current standards. In fact, the consumption of vitamin E is increasing because of a rise in the use of polyunsaturated oils -- a rich source of E. At the same time, the more polyunsaturated fat you at, the more vitamin E you need. Although vitamin E, like vitamin A, is fat soluble, and thus is stored in tissue, vitamin E is relatively nontoxic in comparison with vitamin A. Experts generally consider doses of 200 to 600 mg daily of tocopherol [vitamin E] to be safe.
She stresses the importance of vitamins and minerals found through natural sources as opposed to supplemental intake -- except in the case of deficiencies.
She has about 70 pages devoted to the subject of cancer in Food -- Your Miracle Medicine -- and also an interesting chapter on "Brainpower Foods."
